Our Roots

From Jams to Wood-Fired Wonders

When Joey Thompson rolled into Corinth, Mississippi, in 2015, he was a punk-rock drummer turned head chef who wanted freedom from restaurant routine. He started small—selling handmade jams, jellies, and Moondust seasoning at the Corinth Green Market—but word of mouth lit the fuse. Catering gigs snowballed, and by 2020 the purchase of a portable Neapolitan-style pizza oven became Moondog’s tipping point. The crew cranked out 3,000 pizzas in the first year alone, cementing a new signature offering.

Moondog has never fit a template—and never will. We’ve grilled burgers knee-deep in a creek, flipped pizzas for snow-bound neighbors during Tree Street Pizza Night, and built specialty pies like White Barbecue Chicken with pickled onion or a pineapple-jalapeño blaze finished with Captain Rodney’s glaze. If you’re hunting safe and predictable, we’re probably not your people (and we’re okay with that).

Married to the love of his life Kaylin, Joey’s a family man with three adorable kiddos—Gordon, Elliott, and Adalyn.

Bradley

The Beat-Driven Culinary Maverick

Meet Bradley, the heartbeat of Moondog’s kitchen, a native to Iuka, MS. Despite a few detours, Bradley’s heart always found its way back home. It was this return that not only connected him with Moondog but also led him to cross paths with his girlfriend, Lauren. When he’s not crafting culinary wonders at Moondog, you’ll find him strumming the strings or letting loose on the drums, his true musical love.
